My Fav Healthy(er) Desserts

If you know me, you know I can’t ever resist an after-dinner dessert. I always get a sweet tooth and I try my best to not eat an entire tub of Ben & Jerry’s (which does happen a lot). So here are some healthier dessert options that I make every once in a while to satisfy my sweet tooth.


1. PB Chocolate Chip Microwave Cake

Ingredients:

  • 3 tbsp flour

  • ½ tsp baking powder

  • 1 tbsp maple syrup

  • 1 tbsp peanut butter

  • 3 tbsp of milk (dairy free for me)

  • Dark chocolate chips

Grab a microwaveable mug and add all ingredients besides the chocolate chips. Stir well until combined. Sprinkle a few chocolate chips over the top and pop into the microwave for 1 minute. ENJOY! (It’s super hot right out of the microwave but I like it like that. Just don’t burn your tongue :). I’ve learned from my mistakes. Lol)



2. Chocolate Banana Ice Cream

Ingredients:

  • 2 frozen bananas (Preferably frozen after they’ve turned brown. Adds to the sweetness!)

  • 2 (ish) tbsp cocoa powder

  • Optional: Peanut butter and dark chocolate chips

Scoop the cocoa powder into a bowl and continue adding water until the powder has turned into a liquid. (As shown below.)

Add the bananas and the powder+water mixture to the blender. Blend until combined. (It is pretty thick so you’ll want a strong blender and a tool to help push the mixture down to make sure it’s fully blended. If your blender isn’t strong, you can always make this once the bananas have thawed quite a bit and refreeze before eating it.) Once combined, scoop/pour into a bowl and I always add some peanut butter and additional chocolate chips for some crunch. You can add granola or whatever other toppings you want. ENJOY!



3. Apple Nachos

Ingredients:

  • 1 Apple

  • Peanut butter

  • Honey

  • Cinnamon

  • Dark chocolate chips

Cut up your apple into very thin slices and lay them out flat. Drizzle over your honey and peanut butter. (If you need to, heat up the peanut butter for 30 seconds in the microwave so it’s easier to drizzle.) Sprinkle on your cinnamon and a small handful of chocolate chips. ENJOY!
